Burdock

The production of burdock in Hokkaido amounts to about 10% (third place), following Aomori Prefecture (first place) and Ibaraki Prefecture (second). In Hokkaido, Memuro town, Obihiro city, and Makubetsu town produce the most, followed by Koshimizu town and Abashiri city in Okhotsk. Burdock is grown outdoors, and the time of shipment lasts from late September to mid?November.

(Yanagawa Riso (ideal))
The length of its root is 75cm and its diameter is about 3cm. It has a firm neck and is thick until its tail. It gets fewer cracks and doesn't get pores so quickly. It has bright skin and a rich smell. It is also tender, and therefore enjoyable to eat.
(Tsunetoyo)
This is a variety that was raised by irradiating gamma rays and selecting them many times. This is a heavy cropper burdock whose root area is thick. It is also abundant until its tail. Like the Yanagawa Riso, it gets fewer cracks and doesn't get pores so quickly. This has bright skin and a fine texture. The length of its root is about 80cm.
