Hokkai shrimp

Hokkai shrimp is only caught in Lake Saroma and Lake Notori (Okhotsk area) and the bay of Notsuke (Nemuro area) in Hokkaido.
It has yellow or black stripes on a greenish brown shell. However, when it is boiled, it becomes bright red. Its meat is rich and sweet, and its flavor is delicious. Since the fishing season is short (July to August) and considering catch limitations due to resource preservation, it is impossible to eat out of season. It is very popular during summer.
